Health-permitted builds follow a different path than our standard orders. The permitting process involves your county health department. We provide the schematics and build expertise, but the application and approval process is between you and your county.
That distinction matters more than anything else on this page. Requirements vary by county, and the only office that can tell you what yours are is your local health department. Sink counts, countertop material, NSF certifications, hookup specs: all of it is set by them, not by us. We build to what they tell you.
So the first real step is a phone call or a form on a county website, not an order. Once you have their answers in hand, we can design to them. Until then, anything we drew would be a guess, and a guess is the expensive kind of mistake here.
Plumbing is usually where the county requirements land hardest. Sink options, water tanks, pumps, and NSF-certified rinsers are covered on the plumbing page. Custom tank sizes and layouts for permitted builds are available — tell us during quoting.

Before your consult, contact your county health department and collect their specific requirements. This one is not optional. We cannot design to spec without knowing what your county requires.

Once you have gathered your county's requirements, you will be directed to schedule a 30-minute consult. We review everything together — dimensions, sink specs, plumbing layout, NSF requirements — and confirm what we can build for you.
Projects submitted for county approval require this consult before the build begins.
After the consult we produce detailed build schematics and plumbing diagrams for a flat fee of $300. These documents show your build dimensions, plumbing layout, sink placement, and countertop specs — everything your county needs to review your application.
The $300 covers the drafting work whether or not you go on to place a build order. It is separate from your build deposit.
Take the schematics and submit your health permit application to your county. This step is entirely on you. We do not submit applications and we do not follow up with health departments.
Timelines vary by county and can take weeks to months. We have no way to shorten that and neither does anyone else selling you a cart.
Once your county approves your application, let us know and we move forward with your build order. From there it follows the normal path: estimate, project agreement, deposit, production.
If your county requires changes to the design, we review feasibility before proceeding.
